Double Chocolate Chip Oat Cookies







Now who doesn't love a good chocolate chip cookie and even more when they are on the healthy side right?

I had planned to make chocolate chip cookies this week but after reading Amanda Bootes Banana and Oat Cookie post she inspired me to try something a little more healthy. After several batches and recipe tweaks later these were the end result; with only a few ingredients and no special equipment needed this is a very simple all in one recipe.





For this recipe you will need:
  • 100g Rolled Porridge Oats
  • 40g Maple Syrup
  • 2 tsp Vanilla Extract
  • 65g Almond Butter
  • 30g Dark Chocolate
  • 30g White Chocolate

To start pre heat the oven to 180 degrees.


Now add the oats, maple syrup, almond butter and vanilla extract to a bowl and mix these together until combined - like I said very simple.

The Meridian nut butters are very popular at the moment; I particularly like the smooth almond butter that I am using in this recipe. It's high in protein and is made with just whole almonds and a pinch of sea salt. I also chose to use maple syrup as a sweetener but you could absolutely replace it with something like agave nectar if you wish.



Next stir in the chocolate, I used a mix of roughly chopped white chocolate and dark chocolate chips. Again this is just my preference and what I had to hand but you could mix it up with different flavours, perhaps white chocolate and cranberry or raisin. What flavour combination would you choose?


To ensure equal sized cookies I used a dessert ring from Clas Ohlson. Spoon the mixture into the ring, flatten with the back of a small spoon, then lift away the ring and repeat with the remaining mixture. If you don't have a dessert ring or something similar then don't worry you can just spoon onto the baking sheet and flatten with the back of a spoon. This recipe will make roughly six cookies.





Then pop the baking sheet into the oven at 180 degrees for 12 - 15 minutes. Once the are lightly browned on top take them out of the oven, leave to cool and then snack to your hearts content.



And there you have it super quick, super healthy oat cookies. Enjoy.

    The sort of biscuit you’d pay a small fortune for in a pseudo-health food shop.

    Looks good, with the choc chips giving it the slightest edge of luxury whilst, the oats keep it grounded.
