I'm a huge fan of decadent weekend breakfasts and this weekend was no exception, there is just something naughty about chocolate in the morning. This Nutella French Toast would also be a great Mother's Day breakfast for a Mum with a sweet tooth.

Now let's get started with this quick and simple recipe.
You will need:
- 2 Eggs
- 80ml Milk
- 1/2 tsp Vanilla Extract
- 4 Slices of bread
- 80g Nutella
- 100g Strawberries (diced)
- 2 tsp Caster Sugar
First to prepare the strawberries, add the diced strawberries into a bowl and stir in the sugar, leave them to sit whilst you make the toast. This method is called maceration, don't worry I hadn't heard of the term until today either, it's where you mix berries with sugar until they soften and release their own juices, really bringing out their colour and flavour.
Next whisk together the eggs, milk and vanilla in a large shallow bowl.
Then spread large helpings of Nutella onto each slice of bread. psst... you may want to use more than 80g ;-)
Next sandwich together two slices of bread so the nutella is on the inside. Then pop the sandwich in the egg mixture ensuring to coat both sides for a few seconds, so the egg mixture soaks into the bread.
Heat a little butter in a pan then fry the sandwich on both sides until golden brown.
Finally, remove from the pan and cut the sandwiches into triangles. To decorate sprinkle with icing sugar and a large handful of macerated strawberries.
Wasn't that easy?! Go on ... give it a try!
What's your favourite indulgent breakfast?
Mel xoxo
