Disaronno and Cranberry Jelly

Doesn't jelly just remind you of your childhood? - Summer BBQs and parties.

Now the summer is finally trying to make an appearance I thought some old school jelly was in order but as an adult now I thought it would be great to join my favourite alcoholic drink and love of jelly. So here it is ... Disaronno and Cranberry Jelly, this is definitely an adults only treat. You could however remove the alcohol and replace with fruit or lemonade perhaps. There are so many possibilities and combinations for a great jelly.

For this recipe you will need:

400 ml Cranberry Juice
120 ml Disaronno
1 sachet of Gelatine(this makes a pint)
1 grated and sliced Lime (for decoration)

Glasses or a jelly mould

This is an incredibly easy recipe, so lets get started.

First heat the cranberry juice in a saucepan until bubbles start to form, then remove from the heat. All we are really trying to do here is warm the juice through so it is warm enough to dissolve the gelatine.

Pour in the sachet of gelatine and whisk quickly until it is completely dissolved. Then stir in the Dissaronno. This will make just under a pint so you can add a little more cranberry juice to make it up.

Now pour into the glasses or mould which ever you prefer and place in the fridge to set overnight. These are great to make in advance and you can play around with flavour combinations and add fruit or create layers. I think I'll be trying some more of my favourite cocktails, Pimms and Bramble are next on my list.
I hope you enjoyed this recipe, what would be your favourite flavour combination?
