For my final healthy breakfast in the series is this lovely fresh parfait, it's perfect for those warm summer mornings. Today I will be sharing with you my simple cinnamon pecan granola recipe and how I pair it with greek yoghurt and berries to make this healthy and nutritious breakfast.
Granola is simply toasted oats which you can add you choice of nuts, dried fruit, spices or even chocolate to. This is much cheaper than buying in the supermarket and this way means you will know exactly what is going in to your granola.
For this recipe you will need:
- 80g Oats
- 10 Pecan Nuts chopped
- 1tsp Cinnamon
- 40g Agave Nectar
- Greek Yoghurt
- Berries
First pre-heat your oven to 150C (130C fan).
Next you need to take your oats, chopped pecans, cinnamon and agave nectar and mix together in a bowl. This cinnamon pecan granola has that lovely warm spice from the cinnamon but also the maple sweetness from the pecans - just delicious.
Once all the ingredients are thoroughly coated in the agave nectar, as usual you can use honey or maple syrup instead if you'd like, transfer the mixture to a baking sheet and spread it out in a thin even layer.
Pop in the oven for 10-12mins.
Keep an eye on the granola, after about 5 minutes give it a stir to move the oats around to prevent any of the edges burning. You are looking for a golden finish, when ready remove from the oven and leave to cool and the granola will start to become hard and crunchy, just how we want it.
You can store it in an air tight container for about 2 weeks but mine rarely lasts that long. This granola is perfect as it is, i love to just snack on it but you could also add milk or yoghurt or even on top of warmed apples, so many options with this.
But for a filling and well presented breakfast take a glass and layer up the granola, yoghurt and berries. I decided on blueberries and raspberry but add your choice of fruit.
And they you have it a delicious Greek Yoghurt and Granola Parfait. A fantastic and very filling breakfast packed with healthy goodness. These are also great to make in advance and leave in the fridge or as an afternoon snack.
