Healthy Banana Oat Pancakes



To start off my healthy recipe series it's got to be Banana Oat Pancakes. I have been absolutely loving these over the past couple of weeks, they are high in fibre and protein and totally guilt free! Perfect for weekend breakfasts or why not even make up the batter the night before and whip up a batch before work. With only three ingredients these couldn't be any easier and you know how I like a simple and easy recipe.

For this recipe you will need:
  • 1 ripe Banana
  • 2 Eggs
  • 25g Oats
  • 2tbsp of Greek Yoghurt
  • Drizzle of Agave Nectar 
  • Fresh Fruit - Raspberries and Blueberries

First you need to blend the oats until the form a flour like consistency, this will make for a much smoother batter.




Next finely chop the banana so it is easier to blend and you are less likely to get chunks of banana in your pancakes. Then add the banana and eggs to the blender with the oats and that's all the ingredients you need.




Then blend it all up until it forms a frothy batter and everything is well combined.


Now add a little butter or oil to a small frying pan and pour in a small amount of batter, remember that it spreads so less is more. These will resemble more of an American style stack pancake.
Once you start to see bubbles forming, flip the pancake and once golden brown on both sides stack the pancakes on a plate.



Once you have about 3-4 pancakes and there is no more batter, then you are ready to serve.
I topped mine with a dollop of greek yoghurt, a drizzle of agave nectar but you could use maple syrup or honey if you prefer. Finely add your choice of fresh fruit, I love raspberries and blueberries.

This is a truly delicious and very healthy breakfast, why not give it a go!
