Tortilla Egg Cups

For those who prefer a savoury breakfast then these tortilla egg cups are perfect, great for on the go and very easy to make. They are so versitile, you can fill the cups with pretty much anything.   Perhaps pizza cups with tomato puree, cheese and your favourite pizza topping or fajita cups with salsa, sour cream and chicken.

However today is more of an omelette cup, so here goes with the recipe.

For this recipe you will need:

  • 1 large Tortillas
  • 2 Eggs
  • 40g  Greek Yoghurt
  • 1/2 a Red Pepper
  • 1/2 a small Red Onion
  • Sprinkle of grated Cheese
First pre-heat the oven to 190C.

Then using a mug cut out small discs from the tortillas. I picked up wheat and white tortillas but any would work. Make sure the circles are big enough to fit in the tray and that the sides come up quite high, allowing for a decent amount of mixture to fill the cup.

Now place the tortilla discs into the muffin tin to make the cups.

Now for the filling, in a small jug whisk up the eggs, then mix in the yoghurt, pepper, and onion.

Now pour the egg mixture into the tortilla cups and fill to the top.

Pop in the oven for 20 minutes or until the tortilla cups start to brown and the egg mixture is set.
