Ice cream is another one of my favourites, great for topping puddings, like my Apple & Cinnamon Oat Crumble but equally great by itself on a summers day.
This is definitely not an All Hans-on original as there are recipes all over the internet but it's such a good healthy alternative, I couldn't resist sharing it. I'll also be showing you how you can create Chunky Monkey Ice Cream from this basic recipe.
For this recipe you will need:
- 4 Ripe Bananas
Yes, thats it! Just one simple ingredient, bananas, ripe bananas!!
For a 50cl tub I've used 4 but you could have more or less depending on how much you need. This is a great recipe and so healthy as there are no added sweetener, dairy or fat.
There is however a little bit of preparation required for this as you need to make sure your bananas are frozen.
If you would like to make it into a variation of chunky monkey then you will need:
- Dark Chocolate Chips
- Fudge Chunks
- Walnuts
So to start, cut the bananas into small discs and put them in a freezer bag or container. Then pop in the freezer, 2-4 hours should be enough but overnight is always best. I always have frozen bananas in the freezer because they are great for so many recipes including my Cinnamon Oat Smoothie.
When you're ready take the bananas out of the freezer and pop them into a food processor. I would suggest a food processor over a blender as you need sharp sturdy blades.
First it will start to look crumbly but don't worry it will take a couple of minutes to come together and start to look like ice cream. Just keep pulsing and remember to keep scraping down the sides of the bowl.
After a little while it should look like this. Once it's has come together and looks smooth and creamy this is when you can add any extra flavourings.
To make chunky monkey I added dark chocolate chips, fudge chunks and chopped walnuts. You don't have to add any flavourings, it is just perfect as it is.
There you have it, ready to eat straightaway but it's more like soft serve ice cream. If you want to keep it for later then transfer to an airtight container and pop in the freezer. I used these ice cream tubs from Class Olson. This ice cream is perfect for the summer and a great alternative to store bought ice cream. Very simple to make and super delicious.
